Steps to make Authentic Masala Dosa:
  1. Soak dal and rice separately overnight. Grind them with water into a smooth paste. Mix both of them together nicely. Add salt as required and keep the batter aside for sometime to ferment.
  2. For stuffing, heat oil in a pan. Crackle mustard seeds and hing. Add chana dal and urad dal and let it cook for a while.
  3. Then add green chillies, turmeric powder, and mashed potatoes. Add salt and give a good mix. Add chopped coriander and the stuffing is ready.
  4. Grease your nonstick skillet. Pour a ladle full of batter.. Spread it evenly and let your dosa cook from one side. Spread your stuffing in between.
  5. Serve your dosa hot with sambhar and your favourite chutneys.
